The last loaf (The Ultimate Loaf)

The last loaf (The Ultimate Loaf) – Proportion on 2 loaves

People, who are not allergic to wheat and yeast, we can offer bread baked with a minimum amount of ingredients with excellent taste. In a health food store, buy whole wheat flour, ground on a quern, from organic farming and spring water..

1 a teaspoon of pure honey or legal sweetener, e.g. brown sugar
ok. 450 ml of water
15 g of fresh yeast
675 g whole wheat flour from organic farming, ground on a quill and a little to sprinkle
1/2 teaspoons of salt (freely)
oil to lubricate the mold (tooth. possibilities)
crushed wheat grains from organic farming, poppy seeds or sesame seeds for sprinkling (freely)

Mix the sweetener with 6 tablespoons of warm water. Add the crushed yeast and mix well with a fork. Leave for a few minutes in a warm place to rise. Mix the flour with salt, make a dimple in the center. Pour in yeast. By stirring, pour hot water and make a moist dough. Cover with a clean cloth and leave in a warm place for around 20 minutes.
Sprinkle the pastry board with flour. Remove the dough and add enough flour to knead. Knead vigorously through 5 minutes, then divide into two parts. Grease two plaques 450 gram. Form two rolls from the dough and place them in the molds. Press into the horns with your fists. Leave uncovered in a warm place on 20-30 minutes, to grow – until the dough fills the molds.
Bake in the middle of a hot stove (220°C) about 35 minutes. Remove the bread from the baking trays immediately after baking and place them across the baking trays until cool.. You can sprinkle on top with crushed wheat grain from organic farming, poppy seeds or sesame seeds.

POSSIBILITIES

Oil: sunflower, saffron or other allowed

CAUTION: You can enrich the bread, replacing 2 heaped tablespoons of flour with about the same amount of wheat germ. You can omit salt and sweetener. You will then have a more delicate bread made of only four ingredients – flour, water, yeast and oil to grease the mold.
