CERVETERI (DOC)
Wıno Cerveteri, both red and white, is produced in the northern part of the province of Rome, in an area inhabited in antiquity by the Etruscans. Numerous archaeological and artistic finds, which have been encountered in this area clearly indicate, how important the inhabitants of that time attached to viticulture and wine consumption. The Etruscans usually used a grapevine management system called vite maritata, in which the vine shoots were routed so, to support each other on trees, being their living supports. This practice continues in many parts of central Italy.
In the past decades to the classic varieties of the Lazio region, which are Trebbiano and Malvasia, small amounts of Tocai and Verdicchio grape varieties have been added to create the Cerveteri Bianco wine.
Cerveteri Rosso, on the other hand, is made from a combination of the most classic dark grape varieties typical of central Italy, such as Sangiovese, Montepulciano i Cesanese.
In the sixties and seventies, the customary grapevine management system was used in this area marquee, being a kind of high pergola. However, since the early eighties – Due to the restriction of consumption and the greater attention paid by consumers to the quality of products, growers have introduced a new method of growing grapevines, which limited the amount of wine produced, while favoring experiments with new varieties.
