Cesanese del Piglio
CESANESE DEL PIGLIO (DOC)
For many decades the only wine, which had the right to use the Denominazione di Origine Controllata appeal in the Province of Frosinone was the Cesanese del Piglio wine produced in the territory of the municipalities of Piglio, Serrone, Acute, Anagni i Paliano. It is one of the three DOC wines from the Lazio region, arising from the Cesanese variety, which has found ideal growing conditions in this part of Italy.
Cesanese del Piglio wine is made almost exclusively from vines of the Cesanese di Affile variety, which is a local clone of the Cesanese Comune strain, which is also allowed in a mixture of grapevines. Production specification, remaining faithful to the local tradition, provides for the possibility of using small amounts of light-colored grapes, mainly to increase the acidity of the wine and give it a more interesting aroma.
It's wine – due to its softness, elegance and susceptibility to aging – it is wonderful in a dry version (dry), however, its sweet version is also extremely popular (dolce) and sweetish (sweetheart). Cesanese del Piglio is hauled off very early, because even at the end of November. It can therefore be considered the ancestor of wines novelli, with which it also has another thing in common - it tastes great with edible chestnuts, although, according to local tradition, it should be ready for the time of slaughtering pigs and making hams from them, pork chops, sausages and black pudding.
