Rice salad (Rice Salad) – Portion for 4 people

75 g of long grain rice
2 spoons of allowed salad dressing
100 g raw or cooked vegetables (tooth. possibilities)
2 heaped spoons of fruit
4 green onions peeled and chopped or
6 stalks of finely chopped chives
50 g of the high protein component (tooth. possibilities)
a little salt or permitted sugar to taste

Boil the rice and drain it, set aside to cool, transfer cold to a salad bowl and add sauce. Stir well with a fork. Add vegetables, fruit, spring onions or chives and the selected high-protein ingredient. Mix.
Serve with green salad, watercress or tomatoes.
The soft texture of cooked rice makes, that it is a good basis for raw salads, crispy vegetables. Boiled meat, fish or nuts supplement the protein content of the dish. If you are allergic to citrus fruit, avoid any sauces containing lemon juice.
