CALDARO lub LAKE CALDARO (DOC)

W 1970 r. wino Lake Caldaro – as the first of a series of DOC wines from the Alto Adige region - obtained the right to use the DOC appeal. This high-quality red wine is made in a small area, which covers part of the provinces of Trento and Bolzano. These are areas with a very favorable microclimate, which provides, nearby lake.

 

The wine is mainly made from grapevines of the Schiava variety, although the production specification provides for the possibility of use (in the maximum amount 15%) also varieties Lagrein and Pinot Nero. Schiava strain – known in the German-speaking area as Vernatsch, it has many sub-varieties, among which the most famous ones should undoubtedly be mentioned – Gentile, Grigia i Grossa.

 

The Schiava variety has been known since the 13th century, and its Italian name - according to research carried out in the 14th century by Carlo Cipolla from Verona - is related to the method of growing the vine, referred to as slave vineyard, that is, the slave vine, which consisted of a short pruning of the main shoot of the vine and tying its new shoots to the next bush of the branch.
