FIELDS FLEGREI (DOC)

Campi Flegrei wine comes from Falerno Gaurano – one of the most popular wines of antiquity, which Pliny the Elder praised and which (in less distant times) it was the favorite drink of the rulers of Naples and Roman popes.

 

The wine is made in the area, covering the areas of seven communes, located in and around Naples, in a region widely known for its rich and ancient culture, natural resources and breathtaking nature, which is second to none, even compared to other regions of Italy.

 

The soil typical of these areas is the result of volcanic eruptions. It is a tufted soil, rich in ashes, lapille, pumice and trace elements, which give the vine a distinctive flavor and aroma, and thus also the wines produced from it. The unique composition of this soil allows the cultivation of vines using old methods, which had to be abandoned elsewhere after the phylloxera epidemic, which ravaged Italy at the end of the 19th century.

 

The Falanghina tribe has the same pedigree – an old variety from the Campania region used in the production of white wines. It is grown using the old method below as a baby (in the style of Pozzuoli), which provided for the guidance of the branches on a wooden grate, defined in Latin by the term phalanx.

 

Campi Flegrei red wines are produced using the best grape varieties from the Campania region - Aglianico and Piedirosso, called in the local dialect or pigeon. Campi Felgrei is the result of a magical combination of rich soil, fantastic climate, noteworthy grape varieties, as well as the great regional tradition and history of wine production, cultivation methods geared to low yields and the true virtuosity of wine producers.

 

Undoubtedly, it is also worth trying the very fine Spumante Metodo Classico wine, the production of which allows the use of the recently introduced technique of fermentation in bottles, consisting in turning bottles, shaking yeast and cleaning from sediment (disgorging). The final stage is aging with dead yeast, which should last at least a year.
