BB - Do you know the recipe for a successful party??
IS - I have recently been to such a place with Krystyna and Michał Radgowski. Mrs. Krystyna wonderfully cooks and prepares all kinds of dishes, beautifully covers the table. And although it was a party on a few square meters, which is the general pain of Warsaw residents, there were curious people there, a delight, about various professions - so interesting conversations on all topics and great food.
There were all sorts of salads, stuffed peppers, delicious beetroot, different sauces - of course I'm not listing everything here, only this, which stuck in my memory the most.
BB - And what are your parties like?, I know from the stories, that it is a guest house…?
IS - Both my wife and I attach great importance to the selection of guests, we try, that those who visit us, what they like each other, we are not one of those, who, out of the goodness of their hearts, try to reconcile people in conflict. Nothing comes of this. We like a small group at most 10 people. This is the quantity, we can take care of, feed, "to hug”.
We invite you to come not too late, at the earliest between 6 p.m. and 18,30. There are no days off in my profession, that's why I can't afford to talk too long at night.
We start with the proverbial drink, and dinner is served approx. 19,30. It is usually a buffet and a few small tables, on which we set something. Guests usually have several conversations with each other, several people sit down, sometimes a general conversation takes place. I least like inviting people professionally related to each other, because the conversation always comes down to one topic, just professional and it ceases to be interesting.
What we serve? I would put it like this: a bit of this, a bit of that, so a lot of various snacks on small plates, a lot of different homemade sauces, in which my wife specializes. He has an old grandmother's cookbook, where does inspiration come from. But not only, also imports recipes from abroad, for example, a casserole from Paris: thinly sliced potatoes baked with garlic and something else - it tastes like that, like veal under béchamel - everyone always asks with delight, what is this. I love poultry. First of all, wild birds. The wife prepares them perfectly. We have a lot of hunting friends, so they often give us something, but also ordinary chicken, home-baked on a spit, it tastes great. I would forget about the bigos. And bigos is excellent with us. Picked meats and sauces” are weeks, all carefully cooked, seasoned, filled. After all the snacks we always give something hot - or bigos, or red borscht with patties, sometimes tripe, Fish baked in ramekins. And never too much alcohol, it's so embarrassing, when the interesting gentleman begins to turn into a bore or worse, into a quarrelsome one, aggressive guy, not letting anyone have a say.
