Tartar sauce

A small jar of mayonnaise, a flat spoon of mustard, the juice of two small lemons, spoon of freshly grated horseradish, 2 spoons of chopped chives, chopped little gherkin, hard-boiled yolk rubbed through a strainer and finely chopped boiled protein.

Combine the ingredients. Season to taste with salt, a pinch of powdered sugar and a pinch of ground paprika.
