Sandwich pastes

• Cheese and ham

4 triangles of melted cheese (preferably herbal or emental), spoon of butter or margarine, 5 a dag of ham or other soft sausage, a bunch of parsley

Rub the cheese until smooth with the addition of butter. Pass the sausage along with the parsley through a food processor. Mix all ingredients.

• Vegetable

A little celery; 2 carrots, 2 tablespoons of lemon juice, 4 spoons of mayonnaise, a pod of pickled pepper or a few olives

Grate the peeled celery and carrots on a fine grater, sprinkling immediately with lemon juice, so that the vegetables do not blacken. Mix with mayonnaise and chopped peppers or olives, salt.

• Rybna

2 smoked fish (Herring, mackerel, Cod), a can of anchovy fillets, 3 spoons of butter or margarine, a bunch of small chives, 1 gherkin or a tablespoon of capers

Remove the bones from the fish and chop them finely, rub the anchovies through the sieve. Add butter, chopped chives and carefully rub until smooth. Before greasing the sandwiches, add chopped gherkins or capers.

• Egg

5 jaj, 2 spoons of butter or margarine, spoon of mayonnaise, a teaspoon of mustard, onion salt

Cut the hard-boiled eggs in half and separate the yolks from the whites. Whip the yolks with the butter until smooth, Chop the egg whites as finely as possible. Add the mustard, Mayonnaise, onion salt and mix everything.

Caution: If we prepare sandwiches a few hours before the party (it is not favorable, but sometimes - necessary), pieces of bread or crackers should be spread with a thin layer of butter (it can be vegetable) and only then apply the paste. This will prevent the bread from softening.
