The recipes given include both the old ones – obviously including ingredients and cakes allowed for people allergic to basic products - like and some delicious novelties.
Allergy sufferers can take risks, for there is so much variety in fresh fruit, that the likelihood of an allergy is low. We advise you to try the proposed sets. In order not to waste the leftovers of special bread, please also try out the summer pudding or the wonderful fruit croutons.
To please the guests, you can bake fruit instead of boiling it. When puddings and desserts become a wonderful and colorful culmination of main meals, you can be sure of the boarders' appreciation.

Pudding letni (Summer Pudding) – Portion for 2 people

3-4 slices of regular or legal special bread (see note)
100 g of red currants
50 g malin
50 g of strawberries
permitted sweetener to taste
1 spoon of water

Prepare the fruit and put it in the dish. Add sweetener and water and cover the dish. Heat it over low heat at least 5 minutes, until the fruit becomes soft. Cut off the skins, and cut the slices of bread into diagonal pieces and place them in a small pudding form. Leave one slice whole. Pour the hot fruit mixture and put a whole slice of bread on top. Cover the form with a plate and put weight on it.
Leave it on overnight or at least on 8 hours. The bread is soaked with the fruit juice and becomes a beautiful purple color. Turn the baking tin covered tightly with a plate and place the pudding on the plate. This simple and delicious summer treat can be stored in the fridge for 24 hours.

CAUTION: Tam, where necessary, use wheat-free or gluten-free bread.
