Zupa selerowa (Celery Soup) – Portion for 2 people

1/2 medium onion, sliced
2 teaspoons of oil (tooth. possibilities)
3 celery stalks, along with the leaves, finely chopped
slightly over 150 ml of water broth (tooth. possibilities)
a pinch of salt and freshly ground black pepper

Fry the onions in a large saucepan 3-4 minutes, stirring all the time. It has to be soft, but it cannot turn brown, as it would spoil the color of the soup. Add pieces of celery and fry more 2 minutes. Pour water into the mixer, add fried onion and celery, mix. Pour back into the pot. Bring to a boil, cook over low heat yet 5 minutes.

Strain the soup through a dense metal strainer, rubbing the remnants with a wooden spoon. Add the stock and season to taste. Set aside for an hour or two, to give the soup a taste.

POSSIBILITIES

Oil: sunflower or safflower
Broth: domestic or allowed
CAUTION: This soup is especially tasty, when we use homemade chicken broth to prepare it.
